βHello friends, welcome back to my kitchen! Today Iβm going to show you how to make a classic North Indian curry β Aloo Matar Gravy. This is one recipe that never fails β itβs spicy, tangy, and so comforting. So letβs get started!β
π₯ Ingredients Youβll Need
Potatoes (aloo) β 3 medium, peeled & diced
Green peas (matar) β 1 cup (fresh or frozen)
Onions β 2 medium, finely chopped
Tomatoes β 2 large, pureed
Ginger-garlic paste β 1 tbsp
Green chili β 1 (slit)
Turmeric powder β Β½ tsp
Red chili powder β 1 tsp
Coriander powder β 1 tsp
Garam masala β Β½ tsp
Cumin seeds β 1 tsp
Bay leaf β 1
Oil or ghee β 2 tbsp
Fresh coriander leaves β for garnish
Salt β as per taste

Step 1: Heat the Oil
βFirst, heat some oil in a pan. Add cumin seeds and a bay leaf β let them splutter and release aroma.β
Step 2: Make the Base Masala
βNow add chopped onions and sautΓ© until golden brown. Next goes in ginger-garlic paste and green chili β cook for a minute until raw smell goes away.β
Step 3: Add Tomatoes & Spices
βAdd tomato puree and cook until the oil starts separating. This is when we add our spices β turmeric, red chili powder, coriander powder, and salt. Cook well until masala thickens.β
Step 4: Cook Potatoes & Peas
βAdd diced potatoes and green peas, mix well with the masala. Pour about 2 cups of water, cover, and let it cook until potatoes turn soft.β
Step 5: Finish with Garam Masala
βOnce the gravy thickens, sprinkle garam masala, stir, and simmer for 2 minutes.β
